EverRoast® Tacos with Pineapple Lime Crema

Combine Boar's Head EverRoast® Chicken with sweet pineapple & pear salsa for a Taco Tuesday that is sure to be a hit.

Ingredients


 
Header, Tacos

Flour or corn tortilla
1cup
Guacamole
1lb
Boar's Head EverRoast® Chicken Breast, sliced thick, cubed
1cup
Boar’s Head® Monterey Jack Cheese, shredded
 
Header, Pineapple Pear Salsa
½
Pineapple, diced
1
Pear, diced
½
Red Onion, diced
1
Baby Red and Yellow Peppers, seeds removed, diced
½cup
Cilantro Leaves, finely chopped
1tbsp
Lime juice
¼tsp
ground Cumin
¼cup
Boar’s Head® Monterey Jack Cheese, shredded
 
Header, Pineapple Lime Crema
5oz
Pineapple yogurt
2tbsp
Boar's Head® Kosher Dill Pickle Chips
½tbsp
Lime juice

Instructions


  1. 01Header: Tacos
  2. 02Lay tortillas on a clean work surface.
  3. 03Spoon 1-2 Tbsp. of guacamole on each tortilla.
  4. 04Add EverRoast® Chicken.
  5. 05Add Monterey Jack Cheese
  6. 06Header: Pineapple Pear Salsa
  7. 07For the salsa, combine all ingredients in a large mixing bowl.
  8. 08Spoon salsa mixture on to tacos.
  9. 09Top with shredded Monterey Jack cheese.
  10. 10Header: Pineapple Lime Crema
  11. 11For the crema, combine pineapple yogurt, mayonnaise, and lime juice in a small bowl.
  12. 12Drizzle over tacos.
  13. 13Serve and enjoy.
