Sweet B's® Honey Barbeque Glazed Chicken Tinga Tacos

Combine Boar's Head Sweet B's® Barbeque Glazed Chicken with cilantro and sweet onion for a Taco Tuesday that is sure to be a hit.

Ingredients

Boar’s Head® Sweet B’s Honey Barbeque Glazed Chicken Breast (13096)
1cup
Sweet onion, Chopped
1clove
Fresh garlic, minced
1cup
Fire Roasted Tomatoes
3each
Corn tortillas
2each
Avocado, Sliced
1cup
Fresh cilantro, Chopped
1cup
Red Onion, Diced
1
Cotija Cheese or Queso Fresco, Crumbled
1each
Lime, Cut
1each
Chipotle peppers in adobo sauce, Chopped

Instructions


  1. 01Heat a large skillet over medium. Once warm, add the oil and onion. Sauté for 4 minutes or until tender, stirring occasionally.
  2. 02Add in the garlic and cook for 30 seconds more.
  3. 03Stir in the chipotles, oregano, and cumin, and toast for 1 minute.
  4. 04Add in the tomatoes, stock, and salt. Bring to a simmer, and cook for 7 minutes.
  5. 05Add chicken and fold nicely.
  6. 06Top the tortillas with the chicken and garnish with the avocado slices, cilantro, red onion, and cotija.
  7. 07Serve with a lime wedge for squeezing.
