Spinach, Mushroom & Caramelized Onion Jack Cheese Salad

Ingredients

Olive Oil
8oz
Fresh button mushrooms, stemmed and sliced 1/4-inch thick
 cups
Salt and Pepper, to taste

Fresh spinach
1cup
Boar’s Head® Caramelized Onion Jack Monterey Jack Cheese, cubed

Celery, thinly sliced
½cup
Flat-leaf parsley, chopped
½cup
Chopped walnuts, toasted
cup
Extra Virgin Olive Oil
2tbsp
Cider vinegar
1tbsp
Boar’s Head® Delicatessen Style Mustard
1tbsp
Fresh thyme, chopped
1
Garlic clove, minced

Instructions


  1. 01In a large sauté pan, heat oil over medium heat. Add mushrooms and cook, stirring frequently, until browned, about 6-8 minutes. Season with salt and pepper. Remove from heat.
  2. 02Combine the spinach, cheese, celery, parsley and walnuts in a large bowl.
  3. 03Whisk together extra-virgin olive oil, vinegar, mustard, thyme and garlic. Season with salt and pepper, to taste.
  4. 04Divide salad mixture among serving bowls, top with mushrooms, and drizzle each with vinaigrette.
