Spinach, Mushroom & Caramelized Onion Jack Cheese Salad
Ingredients
1tbsp
Olive Oil8oz
Fresh button mushrooms, stemmed and sliced 1/4-inch thick cups
Salt and Pepper, to taste6
Fresh spinach1cup
Boar’s Head® Caramelized Onion Jack Monterey Jack Cheese, cubed4
Celery, thinly sliced½cup
Flat-leaf parsley, chopped½cup
Chopped walnuts, toasted⅓cup
Extra Virgin Olive Oil2tbsp
Cider vinegar1tbsp
Boar’s Head® Delicatessen Style Mustard1tbsp
Fresh thyme, chopped1
Garlic clove, mincedInstructions
- 01In a large sauté pan, heat oil over medium heat. Add mushrooms and cook, stirring frequently, until browned, about 6-8 minutes. Season with salt and pepper. Remove from heat.
- 02Combine the spinach, cheese, celery, parsley and walnuts in a large bowl.
- 03Whisk together extra-virgin olive oil, vinegar, mustard, thyme and garlic. Season with salt and pepper, to taste.
- 04Divide salad mixture among serving bowls, top with mushrooms, and drizzle each with vinaigrette.
