Summer Elote Salad
A summertime side that comes with a kick, this street-corn inspired salad is tossed with Bold Fiery Chipotle Gourmaise®, Parmigiano Reggiano and Feta Cheese to bring bright, zesty and refreshing flavor to your next cookout.
Ingredients

Corn, husked½
Red Onion, chopped1
Red pepper, chopped¼cup
Boar's Head Bold Fiery Chipotle Gourmaise®2
Lime, for juice½cup
Parmigiano Reggiano Cheese½cup
Crumbled Feta CheeseInstructions
- 01Grill corn over medium heat until tender and slightly charred, about 10 minutes. Remove kernels from each cob and transfer to a serving bowl.
- 02Add onion, pepper and Gourmaise to the bowl and stir to combine. Add the lime juice, cheese and cilantro and toss lightly to combine.
