Bold Horseradish Cheddar Spiced Potato Soup

Garlic, minced1
Onion, diced1
Leek, diced6
Yukon gold potatoes, quartered2
Chicken stock1cup
Heavy cream2stalks
Celery, chopped2tbsp
Prepared horseradish1tsp
Marjoram4
Whole cloves2
Bay Leaves1tsp
Nutmeg1tsp
Salt1tsp
Pepper½bunch
Chives, chopped1cup
Caramelized onions½cup
Boar's Head Horseradish Cheddar Cheese, shreddedInstructions
- 01Heat butter in a 6-qt. saucepan over medium-high heat; add garlic, onion, and leek, and cook, stirring, until soft, about 3 minutes.
- 02Add potatoes, stock, cream, celery, horseradish, marjoram, cloves, and bay leaves, and bring to a boil; reduce heat to medium-low, and cook, stirring occasionally, until potatoes are soft, about 30 minutes.
- 03Season with nutmeg, salt, and pepper; remove from heat, and using an immersion blender, regular blender, or food processor, purée soup until smooth and frothy.
- 04To serve, ladle soup into 4 bowls, and garnish with chives, caramelized onions and cheddar cheese.
