5-Ingredient Mediterranean Potato Salad
Take the stress out of summer entertaining with this quick and easy potato salad. Boar's Head Tzatziki Greek Yogurt Dip and Creamy Feta Cheese do the heavy lifting while adding fresh flavor to crispy roasted potato wedges.

Large red skinned potatoe, wedged3tbsp
Olive Oil½cup
Crumbled Feta Cheese½cup
Tzatziki Greek Yogurt DipInstructions
- 01Preheat oven to 450° F.
- 02Place potato wedges on a baking sheet and drizzle with 3 tablespoons of olive oil, then season with salt and pepper. Mix the potatoes until evenly coated in oil and seasoning.
- 03Once coated, evenly spread out the potatoes on the sheet. Place the sheet in the oven and bake for 20-25 minutes, flipping halfway through. Bake until the wedges are golden brown.
- 04Arrange the wedges on a serving plate, then sprinkle with feta and dollops of tzatziki.
- 05Serve and enjoy!
