Italian Chicken Sausage Stuffed Tomatoes

Quinoa, dry1cup
Chicken broth2tbsp
Olive Oil1pkg.
Robust Italian All Natural* Chicken Sausage, sliced into rounds2
Baby spinach leaves, roughly chopped1cup
Basil pesto4
Beefsteak tomatoes4tbsp
Parmigiano Reggiano Cheese, gratedInstructions
- 01Preheat oven to 375° F.
- 02In a medium sauce pan, bring quinoa and chicken broth to a boil.
- 03Reduce heat to low, cover and let simmer for about 15 minutes.
- 04While quinoa cooks, heat olive oil in a large skillet over medium heat.
- 05Sauté Chicken Sausage until browned.
- 06Add spinach and cook until the leaves wilt.
- 07Combine the sausage, spinach, quinoa, and pesto in a large bowl and set aside.
- 08Slice off the tops of the tomatoes and clean out the inside of the tomatoes.
- 09Fill each tomato with the quinoa-sausage filling.
- 10Place each on a deep baking dish.
- 11Bake for 20 minutes or until tender.
- 12Top with grated Parmigiano Reggiano Cheese.
