Italian Chicken Sausage Stuffed Tomatoes

Ingredients


1cup
Quinoa, dry
1cup
Chicken broth
2tbsp
Olive Oil
1pkg.
Robust Italian All Natural* Chicken Sausage, sliced into rounds

Baby spinach leaves, roughly chopped
1cup
Basil pesto
4
Beefsteak tomatoes
4tbsp
Parmigiano Reggiano Cheese, grated

Instructions


  1. 01Preheat oven to 375° F.
  2. 02In a medium sauce pan, bring quinoa and chicken broth to a boil.
  3. 03Reduce heat to low, cover and let simmer for about 15 minutes.
  4. 04While quinoa cooks, heat olive oil in a large skillet over medium heat.
  5. 05Sauté Chicken Sausage until browned.
  6. 06Add spinach and cook until the leaves wilt.
  7. 07Combine the sausage, spinach, quinoa, and pesto in a large bowl and set aside.
  8. 08Slice off the tops of the tomatoes and clean out the inside of the tomatoes.
  9. 09Fill each tomato with the quinoa-sausage filling.
  10. 10Place each on a deep baking dish.
  11. 11Bake for 20 minutes or until tender.
  12. 12Top with grated Parmigiano Reggiano Cheese.
