Risotto with Sweet Slice® Uncured Ham & Mushrooms

Ingredients
3tbsp
Unsalted Butter2
Shallot, sliced1½
Rice, Arborio1tsp
Fresh Fennel¼tsp
Kosher salt1pinch
Freshly ground pepper10oz
Cremini Mushrooms½tsp
Fresh rosemary, minced1cup
Dry white wine2
Low sodium chicken broth1cup
Boar's Head Sweet Slice® Smoked Ham, diced½cup
Parmigiano Reggiano Cheese, shaved¼cup
Fresh parsley, choppedInstructions
- 01Melt the butter in a medium saucepan over medium-high heat, then add the shallots and cook until just soft, about 2 minutes.
- 02Add the Arborio rice and fennel (if using), 1/4 teaspoon salt, and pepper to taste and cook, stirring, until the rice is lightly toasted, about 4 minutes.
- 03Add the mushrooms, rosemary and wine and cook, stirring, until the mushrooms are soft and the wine is absorbed, about 3 minutes.
- 04Add the chicken broth and bring to a simmer; cover, reduce the heat to medium low and cook stirring occasionally until the rice is tender and almost all of the liquid is absorbed, 8 to 10 minutes
- 05Stir in the ham, parmesan and parsley. Season with salt and pepper. Enjoy!
