London Broil Birria Style Tacos

Inspired by the street-cart favorite, these tacos are crispy, savory, and loaded with melty Monterey Jack Cheese. Thinly-sliced London Broil Roast Beef and canned chipotle peppers cut down on prep time, without sacrificing flavor.

Header, Birria Broth

Olive Oil

Small Onion, chopped
1can (4 ounces)
Chipotle Peppers in Adobo Sauce

6-inch Tortilla
1lb
Boar's Head London Broil Roast Beef, thin sliced and roughly chopped
1cup
Boar's Head® Monterey Jack Cheese, shredded
½cup
Cilantro, chopped

Instructions


  1. 01Header: Birria Broth
  2. 02Heat oil in a small pot over medium high heat. Add chopped onion and peppers and sauté until onions are translucent, about 5 minutes. Mix in the beef broth and keep on low.
  3. 03Header: Tacos
  4. 04Preheat oven to 400ºF.
  5. 05Coat baking sheet with nonstick cooking spray.
  6. 06Dip tortillas in the prepared broth and place on the baking sheet. Top with roast beef and cheese, then fold tortillas in half.
  7. 07Bake for 5-7 minutes until brown and toasty.
  8. 08Serve and dip into remaining broth.
