EverRoast® Chicken Cobb Salad with Jalapeño Corn Vinaigrette

Enjoy a fresh, healthy salad with nectarine, avocado, corn, and our Naturally Smoked Bacon, topped with Creamy Feta Cheese. It's a balance of sweet and spicy (the best of both worlds), and it's one you'll want to make again.

Ingredients

Butter Lettuce, torn

Cherry Tomatoes, halved
1whole
Nectarine, sliced
4oz
Boar's Head Feta Cheese, crumbled
1whole
Avocado, sliced
6strips
Boar's Head Thick Cut Bacon, chopped
4
Hard boiled egg, sliced
¼cup
Extra Virgin Olive Oil

Lime, juiced
2tbsp
Apple cider vinegar
1tbsp
Honey
1whole
Baby Red and Yellow Peppers, seeded, if desired
¼cup
Fresh cilantro, chopped
½cup
Corn kernels
 
Flaky sea salt (i.e. Maldon Salt), to taste

Instructions


  1. 01 In a large salad bowl, combine the lettuce, tomatoes, nectarines, and feta.
  2. 02Top the salad with chicken, avocado, bacon, and eggs.
  3. 03For the vinaigrette, combine all remaining ingredients, except the corn, in a blender. Add 1/4 cup of corn and pulse until mostly smooth.
  4. 04Stir in the remaining corn, and drizzle the dressing over the salad.
  5. 05Serve and enjoy.
