Roasted Garlic Hummus Mezze Bowl

Enjoy all of the flavor and essence of the Mediterranean in one satisfying bowl. Our creamy Roasted Garlic Hummus, Feta Cheese and Tzatziki Greek Yogurt Dip come together with a medley of vegetables, herbs and farro for a light and refreshing dish.

Ingredients

Cooked farro
½cup
Fresh parsley
¼cup
Fresh mint, chiffonade
¼cup
Red Onion, julienned
2tbsp
Olive Oil
 
Sea Salt, to taste
1cup
Cherry tomatoes, halved
1container
Boar's Head Roasted Garlic Hummus
½cup
Crumbled Feta Cheese
1
Persian cucumber, chopped
¼cup
Kalamata olives, halved
 
Tzatziki Greek Yogurt Dip, for topping
1
Lemon, for juicing
 
Grilled naan, for serving

Instructions


  1. 01Cook the farro according to package directions then drain and place in a mixing bowl.
  2. 02Finely chop the parsley, mint and red onion; add it to the farro with olive oil and tomatoes then toss to combine. Season with sea salt as needed.
  3. 03In two individual shallow bowls, evenly spread the hummus to create your base. Top with the farro mixture, feta cheese crumbles, cucumber and kalamata olives, then top off each bowl with a dollop of tzatziki, a squeeze of lemon juice, any leftover olive oil and salt & pepper to taste.
  4. 04Serve with grilled naan.
