Delicata Squash Bake
Try this wholesome and hearty side the next time you’re hosting company. Baked delicata squash - a winter squash with a rich and sweet taste - is made even better by Boar’s Head Pancetta and Parmesan Cheese.
Ingredients

Delicata Squash, halved lengthwise, seeds removed, cut into 1/2-inch slices6oz
Boar's Head Pancetta, diced2tbsp
Coconut oil, melted1pinch
Flaky sea salt (i.e. Maldon Salt)1cup
Pomegranate seed¼cup
Roasted hazelnuts, loosely chopped½cup
Parmigiano Reggiano Cheese, shaved¼cup
Fresh parsley, chopped Instructions
- 01Preheat oven to 400 degrees F (204 degrees C).
- 02Add sliced squash to a bare baking sheet (1 large or 2 small, depending on size of squash) and toss with pancetta, oil and sea salt. Then arrange in a single layer.
- 03Bake for 20-25 minutes, flipping once at the halfway point to ensure even baking. You’ll know it's done when fork tender, golden brown, and slightly caramelized.
- 04To serve, arrange baked squash on a serving dish and top pomegranate seeds, hazelnuts, cheese and parsley. Best when enjoyed immediately.
