Blazing Buffalo® Chicken Enchiladas (World Cup)
Ingredients

Boar's Head Blazing Buffalo Style Chicken Breast, Shredded30oz
Boar's Head® Cream Cheese, Softened30oz
Product: 15008 FS Creamy Gorgonzola Cheese Crumbles30each
Corn tortillas3
Onions, Diced2
Poblano peppers, Seeded & diced1cups
Celery, peeled & diced1bunch
Fresh cilantro, Washed & picked8oz
Mexican Crema or Sour Cream4each
Jalapenos, Seeded & diced1cup
Olive oilInstructions
- 01Preheat oven to 375° F.
- 02Saute the onions, peppers and celery in half of the olive oil until softened.
- 03Combine the shredded chicken and sauteed vegetables with the cream cheese.
- 04Brush each tortilla (one side only) with the olive oil.
- 05Working in batches, warm the tortillas in a pan, oil side down.
- 06Remove the warmed tortillas and fill with the buffalo chicken filling (approximately 2 tablespoons).
- 07Roll and place in an oven proof with the seam side of the tortilla down. baking dish.
- 08Repeat until all the tortillas are filled.
- 09Sprinkle the crumbled Gorgonzola over the rolled tortillas.
- 10Heat in the oven for 10 minutes until the filling is completely warmed through and the tortilla is crispy.
- 11Remove the enchiladas and portion (3 per serving).
- 12Garnish the enchiladas with the crema, cilantro and diced jalapenos.
- 13Serve
