Ham and Mushroom Broth

4 oz Boar's Head Sweet Slice® Smoked Ham, Julienne
1 Small Shallot, Minced
1 oz Butter
2 tsp Scallions, Chopped
.06 tsp White Pepper
1 cup Dried Mushroom Mix
1 tsp Lime Juice
3 cups Low Sodium Chicken Broth
Directions Directions
Soak mushrooms in broth for 30 minutes then drain reserving the broth in a separate bowl. Julienne ham into ¼" pieces. In a saucepot, melt butter over medium heat and sauté shallots until tender. Add chicken broth, mushrooms and white pepper. Bring soup to a light boil. Add in ham and turn off heat. Mix in lime juice and scallions. Serve hot.
