Scrambled Egg & Canadian Bacon Quesadilla

3 oz Boar's Head Canadian Style Bacon, Thinly Sliced
2 oz Boar's Head White Vermont Cheddar Cheese
1 oz Avocado, Diced
3 oz Hash Brown Potatoes
1 oz Tomato, Diced
1 tsp Cooking Spray
3 oz Egg Beaters, Scrambled
2 Flour Tortilla
Directions Directions
  • Spray saute pan with cooking spray and scramble eggs over medium heat. Place one flour tortilla in a clean saute pan and add cheese, avocado, bacon, egg, potatoes, and tomatoes to the tortilla and heat over medium heat, approximately one minute or until tortilla becomes slightly crispy.
  • Top with second tortilla and flip, heating the other side until tortilla is slightly crispy or cheese is melted. Cut into four pieces and serve warm.
