VidaliaŽ Onion Summer Salsa with Shrimp

The sweet and savory tang of Boar's Head Sweet Vidalia Onions in Sauce accents the crisp flavor of fresh watermelon and blueberries for a healthy summer dish.

½ cup Boar's Head Vidalia Onion Relish
2 tbsp Olive Oil
1 tbsp Italian Parsley, Chopped
Salt, To Taste
½ cup Blueberries
1 tbsp Cilantro, Chopped
½ cup Cucumber, unpeeled, Finely Chopped
Freshly Ground Pepper, To Taste
12 Grilling skewers, medium
1 lb Shrimp, jumbo
cups Watermelon, seedless, Diced Finely

  • Serves 6
  • Mix together the olive oil, cilantro and parsley; add the shrimp, massaging the oil and herbs into each shrimp with your fingers. Skewer the shrimp at the top and near the tail for easy turning. Thread 4 per skewer, salt and pepper lightly; place on a hot grill, cooking on both sides until lightly browned.
  • Meanwhile, mix together the watermelon, blueberries, cucumber and Boar's Head Sweet Vidalia Onions in Sauce. Place shrimp on a serving plate;drape some salsa over the top, leaving extra for serving. Garnish with parsley.
