The sweet and savory tang of Boar's Head Sweet Vidalia Onions in Sauce accents the crisp flavor of fresh watermelon and blueberries for a healthy summer dish.

| 12 | Grilling skewers, medium | |
| 1 | lb | Shrimp, jumbo |
| 1½ | cups | Watermelon, seedless, Diced Finely |
- Serves 6
- Mix together the olive oil, cilantro and parsley; add the shrimp, massaging the oil and herbs into each shrimp with your fingers. Skewer the shrimp at the top and near the tail for easy turning. Thread 4 per skewer, salt and pepper lightly; place on a hot grill, cooking on both sides until lightly browned.
- Meanwhile, mix together the watermelon, blueberries, cucumber and Boar's Head Sweet Vidalia Onions in Sauce. Place shrimp on a serving plate;drape some salsa over the top, leaving extra for serving. Garnish with parsley.
