Hoppin' John Salad

6 oz Boar's Head Black Forest Smoked Ham, Diced
½ cup Celery, Diced
1 cup Green Bell Peppers, Chopped
1 cup Vidalia Onion, Chopped
1 tsp Boar's Head Jalapeno Pepper Sauce
2 tbsp Extra Virgin Olive Oil
¼ tsp Black Pepper
¼ cup Fresh Parsley, Chopped
¼ tsp Salt
3 cups Black eyed peas, Cooked
3 cups Brown Rice, long grain, Cooked
2 Garlic Cloves, Crushed
4 tbsp Vinegar, Red wine
Directions Directions
Prepare rice and peas according to package directions. In a large bowl, mix the rice, black eyed peas, onion, celery, peppers, parsley and ham. In a separate bowl, whisk together the remaining ingredients. Add dressing, mix well and chill. Serves 8. Serving size: approximately 1 cup.
