| 6 | oz | Boar's Head Black Forest Smoked Ham, Diced |
| ½ | cup | Celery, Diced |
| 1 | cup | Green Bell Peppers, Chopped |
| 1 | cup | Vidalia Onion, Chopped |
| 1 | tsp | Boar's Head Jalapeno Pepper Sauce |
| 2 | tbsp | Extra Virgin Olive Oil |
| ¼ | tsp | Black Pepper |
| ¼ | cup | Fresh Parsley, Chopped |
| ¼ | tsp | Salt |
| 3 | cups | Black eyed peas, Cooked |
| 3 | cups | Brown Rice, long grain, Cooked |
| 2 | Garlic Cloves, Crushed | |
| 4 | tbsp | Vinegar, Red wine |
Prepare rice and peas according to package directions. In a large bowl, mix the rice, black eyed peas, onion, celery, peppers, parsley and ham. In a separate bowl, whisk together the remaining ingredients. Add dressing, mix well and chill. Serves 8. Serving size: approximately 1 cup.
