Goat Cheese & Fuji Apple Salad

¼ cup Fresh Baby Spinach, Chopped
6 cups Spring Mix Lettuce
1 tbsp Extra Virgin Olive Oil
¼ cup Scallions, Chopped
tbsp White Vinegar
10 slices Basil, fresh, Chopped
Salt & Pepper, To Taste
7 oz Boar's Head Slicing Goat Cheese, Shaved
3 Fuji Apples, Sliced in Wedges
½ tsp Honey
¼ cup Toasted Slivered Almonds
Directions Directions
  • In a medium bowl, combine the white wine vinegar and the honey. Toss in the apples.
  • Chop the basil and the baby spinach into narrow strips, toss in with the apples.
  • Chop the scallions finely and add to the apple mixture
  • Add the salad greens, salt & pepper, toasted almonds and olive oil.
  • Toss to combine. Check for taste, adding remaining vinegar and additional honey if desired.
  • Add the slicing goat cheese and toss briefly to combine. Serves 4.
