| ¼ | cup | Fresh Baby Spinach, Chopped |
| 6 | cups | Spring Mix Lettuce |
| 1 | tbsp | Extra Virgin Olive Oil |
| ¼ | cup | Scallions, Chopped |
| 1½ | tbsp | White Vinegar |
| 10 | slices | Basil, fresh, Chopped |
| Salt & Pepper, To Taste | ||
| 7 | oz | Boar's Head Slicing Goat Cheese, Shaved |
| 3 | Fuji Apples, Sliced in Wedges | |
| ½ | tsp | Honey |
| ¼ | cup | Toasted Slivered Almonds |
- In a medium bowl, combine the white wine vinegar and the honey. Toss in the apples.
- Chop the basil and the baby spinach into narrow strips, toss in with the apples.
- Chop the scallions finely and add to the apple mixture
- Add the salad greens, salt & pepper, toasted almonds and olive oil.
- Toss to combine. Check for taste, adding remaining vinegar and additional honey if desired.
- Add the slicing goat cheese and toss briefly to combine. Serves 4.
