Pineapple Rice Salad with Ham



  • 1 cup long grain brown rice
  • 1 lb Boar's Head Sweet Slice Boneless Smoked Ham, sliced ¼" thick
  • 2 tbsp olive oil
  • 1 cup chopped pineapples, drained
  • ½ cup green onions, sliced
  • 2 tsp lime juice
  • 2 tsp lemon juice
  • 1 tsp kosher salt
  • ¼ tsp crushed red pepper flakes

  • Cook rice according to package instructions and tranfer into a large bowl to cool. Cut ham into ¼" cubes. Mix all ingredients together. Let salad chill for 1 hour before serving.
